Ingredients: 3 cups water
10 cloves
4 cardamom pods
2 sticks cinnamon
1 can (12 ounces) of concentrated pineapple juice, frozen, thawed
1 quart low pina colada frozen yogurt, soft *
1 1 / 4 cup of mineral water with lemon
1 1 / 4 c. Tea rum extract
3 / 4 c. Coconut tea extract (optional)
* You can substitute pineapple sorbet for a low-fat yogurt, frozen Pina Colada. With the use of pineapple sorbet, use of extract of coconut taste more authentic.
Instructions: 1 Combine water, cloves, cardamom and cinnamon in a small saucepan. Bring to a boil over high heat, reduce heat to low. Cover and simmer for 5 minutes, then allow to cool. Strain and discard spices.
2. Mix water and spices, concentrated pineapple juice and frozen yogurt in a small bowl or jar. Stir until it melts frozen yogurt. Add the Seltzer, rum extract and coconut extract, if desired. Garnish with mint sprigs if desired.
